Pink Peppercorn Caesar

CaesarpinkpeppercornresizeThis is the last post on my unplanned pink peppercorn series (Ha! That cracked me up.  As if i didn't just get obsessed with pink peppercorns and make three or four dishes in the span of a few days.  What a joker).  Crab cakes and fondue have received the PP treatment.  A final and simple recipe to appreciate the bold flavor of the pink peppercorn is a version of Caesar salad.

A creamy, rich Caesar dressing is the perfect base for toasted and ground pink peppercorns.  The PPs add a floral bite and textural crunch to the dish that really adds to the creamy dressing and fresh crisp bite of whole romaine hearts.

This recipe is a breeze and a quick way to experience the PP flavor in a simple yet revealing recipe.

FYI, I virtually decided to make this at the last minute and didn't have anchovies on hand.  I would have added them if I had them, but left them out for this reason. 

 Caesar Dressing:
1 egg
1 tablespoon Dijon mustard
1 tablespoon chopped garlic
3 teaspoons fresh lemon juice
Worcestershire sauce
2 cups olive oil
2 tablespoon warm water, if needed
1 cup freshly grated Parm Regg
whole pink peppercorns
romaine lettuce
kosher salt

Toast whole red peppercorns for 1 minute.  Ground until fine.  Place the egg yolk, mustard, garlic, lemon juice, one heaping tablespoon ground pink peppercorn, pinch salt, and a dash of Worcestershire sauce into a food pocessor or a salad bowl if you prefer to whisk by hand. Blend and then add the olive oil in a slow, steady stream until it is fully incorporated. If the dressing becomes too thick, add a touch of warm water to thin out.  Add the cheese and continue to blend.  Refrigerate until needed.  Shave thin slices of Parm Regg with veg peeler for garnish.  You can toss the romaine with dressing in bowl and serve, or drizzle dressing on romaine on the plate.

me too. i actually had a tableside caesar at this steak restaurant in LA last night called Boa. So phenominal. I wished I had another one for lunch today...

very few places here make a good one - now i'm thinking about having one for lunch tomorrow. drats! :)
